October is Breast Cancer Awareness Month, and Kaiser Restaurant Group has launched a special trio of pink cocktails that will benefit the Desert Cancer Foundation's Susan B. Jackson Breast Cancer Fund. KRG's Resident Mixologist Tom Murphy has created the refreshing Pink Pearita, Skinny-n-Pink, and Pink Squeeze cocktails that are available at all of the company's Coachella Valley Restaurants for $9 each. Two dollars from each purchase will be donated to the Breast Cancer Fund. The restaurants' overall goal is to raise between five and ten thousand dollars in donations.
The Pink Pearita is made with pear vodka and elderflower liqueur, shaken with prickly pear nectar and fresh lemon juice, and served straight up in a martini glass. Skinny-n-Pink, composed of berry vodka, muddled fresh raspberries, organic agave nectar, fresh lime juice, and white cranberry juice, is delicious and has only 177 calories. The Pink Squeeze is made with Bacardi Limon rum, orange liqueur, fresh squeezed lime and pink grapefruit juices, with a splash of Grenadine.
The Suzanne Jackson Breast Cancer Fund underwrites breast cancer screening tests for uninsured women in the Coachella Valley. The Fund, administered by the Desert Cancer Foundation, is named for the late LPGA tournament director, Suzanne Jackson, who was a part-time desert resident and a victim of breast cancer. It provides local residents with access to screening and diagnostic testing for breast cancer, provided they are uninsured, cannot afford testing and live in the Coachella Valley. The income for participants to qualify is the same as the State of California's Breast Cancer Early Detection Program. However, the Fund does not have an age restriction.
