Saturday has become a new favorite among area barbecue lovers, as TWENTY6 at La Quinta Resort & Club and PGA WEST has begun using a burly 55-gallon drum smoker for its Saturday Night Barbecue.
Authentically-prepared barbecue is a passion for resort executive sous chef Michael Vaughn, who rises in the wee hours of Saturday to prepare TWENTY6 restaurant’s new smoked brisket, pork butt and other pit-lovers’ selections. Vaughn’s richly smoked brisket requires at least 12 hours start to finish, and, like all of his Saturday Night Barbecue selections, is served with baked beans, fresh sweet Indio corn on the cob, baked potato and house-made barbecue sauce.
The use of special wood for smoking is a highlight of the TWENTY6 Saturday preparation marathon. Pork Boston Butts, for example, receives its smoke from aromatic apple wood that is obtained from Ha’s Apple Farm in the central California mountain town of Tehachapi. The Drum smoker is set and lit as early as 3 a.m., and the pork is then basted at calculated points with apple juice, in time for Saturday’s guest arrivals.
“You really have to babysit the fire,” said Chef Vaughn of the lengthy procedure. “A lot of technique is involved, and the results certainly add interest to our Saturday blue plate specials. We’re also working with several other interesting woods, along with paired beers and wines, to
make every Saturday barbecue an amazing experience.”
Saturday Night Barbecue at TWENTY6 is complemented by the similar use of a Big Poppa Smoker at Morgan’s in the desert, which is offering its own festival of summer flavors between now and September. La Quinta Resort & Club’s new barbecue offering also provides an advance taste of what will be presented at this December’s second annual King of the Smoker event. Hosted by the resort, King of the Smoker 2013 will again feature the world’s top pitmasters, vying in an all-night cooking session for one of the largest annual purses in the world of barbecue.
