Lantana, Hyatt Regency Indian Wells In Synch With Modernist Looks

Contemporary California menu adds to outdoor terrace's ambiance

These are the touches which have brought the renovated and updated terrace at the Hyatt Regency Indian Wells’ Lantana and Agave Sunset Lounge in line with the hotel’s new modernist look, and unifies the restaurant and lounge through this connecting outdoor venue. 

Lantana’s terrace offers granite topped tables and modernist outdoor chairs under a high trellis with shade cloth canopy; square glass lanterns swirling with flames light up the patio.

The Menu

Lantana’s talented chef Geoff Bogorad has redesigned the contemporary California menu with simplicity and yet plenty of innovative choices – from starters, soup and salad, entrees and pastas.

The house ceviche combines shrimp and mahi mahi with fresh lime, cilantro, tomato, red onions, cucumber and jalapeno for a refreshing yet spicy appetizer. Fried long stem artichokes are served with chipotle and basil aioli.

A delicate watercress salad layers chilled sliced golden beets and ricotta salad drizzled with balsamic and olive oil; a flavorful contradiction of earthy and sweet with the added texture of crunchy Marcona almonds.

Perfectly seared ahi steak served on Mediterranean quinoa with steamed artichokes is artistically dotted with black olive sauce puree.

A delicately grilled filet of Skuna Bay salmon with creamy miso risotto (pictured at right) came topped with crisply fried, sesame-sprinkled green beans.

Other items that caught our attention were a vegetarian turnover — lentils, goat cheese, seasonal vegetable, pesto and marinara sauce ticked into puff pastry; and Duroc pork chops paired with black pepper spaetzle, sautéed cabbage and caramelized apples.

Family-Style Supper Series

Lantana has also launched a new family-style monthly supper series called Desert Dinners.  Served on the second Sunday of the month, they feature alliteratively themed feasts – “Cheese & Chardonnay,” “Shakes & Sliders,” “BBQ & Beer.”

Chef Bogorad said that the culinary team at Lantana Restaurant came up with the “Desert Dinner” series as a way to create a more community-based, closer-knit experience both for guests at the resort and diners from the local community.

“We wanted to create some dishes and offerings that aren’t typically on the menu at Lantana, and introduce a bit of casual fun into weekend dining,” says Bogorad.

The Chardonnay & Cheese this month offered three courses showcasing various cheeses. A super rich grilled cheese sandwich with heirloom tomato brought together sharp cheddar and smoked mozzarella. Accompanying side dishes were white cheddar mashed potatoes and roasted broccoli with cheese fondue.  A glass of chardonnay parlayed a crisp, light balance to the cheeses.

Desert Dinners coming up are Sliders & Shakes, April 13; BBQ & Beer, May 11; and Tacos & Tequila, June 8.
