Palm Desert restaurant continues to expand low-cal offerings

Since its initial launch in 2012, Daily Grill's 600 calorie lunch and dinner dishes have become increasingly popular with diners.

Palm Desert is one of the Southern California based locations that will be testing nine new menu items being phased in to coincide with the seasons. The philosophy of the revamped menu items is consistent with the idea that eating well doesn’t mean having to sacrifice flavorful food. Recipes are made from scratch daily and attention to fresh ingredients is key.

“I don’t buy food. I buy ingredients. Everything is freshly made on the menu," says Corporate Chef, Brian Rushton, of Daily Grill Restaurants, which has 17 U.S. locations.

 

Salmon is sourced sustainably based upon availability at different times of year. Wild salmon from the Northwestern U.S. is featured in this healthy preparation of Green Tea poaching liquid. It is served with organic Jasmine rice for a nutty accompaniment to soak up the fragrant broth.

 

The menu includes a wide variety of offerings for salad seekers. Fresh vegetables and grains such as quinoa and jasmine rice are featured to cater to those with gluten sensitivities.

“It is important to offer people options that keep up with current food trends," Chef Rushton says. “Healthy and low-calorie preparations that are still full of flavor are what customers want.” He tests new menu items and listens to customer feedback to find out which items to launch on a wider scale.

 

This natural, hormone-free chicken breast is not injected with any water or additives and is shipped direct from the farm. The bone-in cut is pan-seared and then roasted in the oven on high heat to crisp up the skin and retain a succulent and tender interior.

 

Health-minded patrons can look forward to more options being added and replaced in keeping with a seasonal rotation. Items like Smoked Chicken Chili are in the works to be featured as heartier fare for winter. Stop in for lunch or dinner for a flavorful foray into lower-calorie dining options.
