Many Coachella Valley hotels have adopted sustainability in exciting and inventive ways.

We’ve checked in to some of our favorites and see what they have to offer.

This week: Miramonte Resort and Spa

Mirko Marchi, director of Hotel Operations for the Miramonte Resort and Spa in Indian Wells, fills us in on ‘green chemistry’ and the many benefits of farm-to-table cooking.

When did you first introduce eco-friendly features, and how did you start?
“The Miramonte Resort and Spa’s team has long been committed to preserving the environment. Recycling was our initial green activity, and it’s been in place for many years. In 2012, the property recycled 25,621 pounds of glass, 97 pounds of plastic, and 70 pounds of aluminum.”

Do you receive many comments and how do guests react?
“Honestly, we don’t receive a whole lot of input from our individual guests. However, organizations booking group travel are increasingly becoming more conscious of booking green-certified hotels.”

What qualities do you think are most important to male guests?
“Guests, in general, are pleased that we have responsible practices when it comes to our environmental impact.”

What qualities are most important to female guests?
“Our latest news is that the resort’s The Well Spa has partnered with Germaine de Capuccini to use and carry their line of products. Germaine de Capuccini makes green initiatives a priority. They use a ‘green chemistry’ manufacturing process to ensure that their products are produced with natural organic ingredients, and the product packaging is biodegradable. Women love their products!”

Can you tell me about the most unusual eco-related request you’ve ever received?
“We did have a guest ask about getting the pen in her room refilled with more ink. Other than that, nothing out of the ordinary.”

What’s your favorite eco feature?
“Our restaurant — The Grove Artisan Kitchen — features farm-to-table freshness with many of the produce ingredients coming from local sources. In addition, we have an expansive herb garden on property that the restaurant’s Executive Chef, Robert Nyerick, uses. There is a growing concern about the resources needed for food to travel from field to plate. By reducing food miles, we conserve fuel and reduce emissions that pollute our environment. And the food tastes better!”

Any changes or additions coming up?
“We evaluate environmental friendly practices throughout the year, but we currently don’t have any additional new plans for 2013.”
