Hyatt Grand Champions Resort Villas, and Spa Indian Wells, CA 92210 760-341-1000 Contemporary California Cuisine Located inside the Hyatt Grand Champions Resort, Villas and Spa’s lobby, Lantana Restaurant overlooks the stunning Indian Wells Golf Resort’s Celebrity Course from its climate-controlled terrace. Named for the aromatic yellow, orange, or blue desert verbena, Lantana is a colorful fresh, post Modern design reminiscent of Palm Springs’ bold, architectural achievements in the 1950s and ‘60s. The restaurant’s welcoming entrance invites guests into the dining room via stone tiles and French doors. Posh chairs, armchairs, and banquettes upholstered in understated brown-and-green geometric patterns set off polished wood tables inset with stainless steel. Contemporary accents, such as bright red pepper mills, and unusual lighting fixtures throughout the restaurant resonate with the colorful, post Modern look. A dramatic state-of-the-art stainless steel kitchen features black granite countertops and iridescent turquoise, gray, and blue glass mosaic tiles. Centerpiece to the open-air kitchen is the mesquite-burning grille and wood-burning oven. Guests dine in a warm, contemporary setting while enjoying the chefs’ creativity. A stainless steel wine cellar with tempered-glass doors displays Lantana’s extensive wine library highlighting Californian, Italian, and French vintages. Executive Chef Chris Mitchum’s menu showcases contemporary California cuisine with an emphasis on the freshest produce, meat, poultry, and seafood available. Offering breakfast, lunch, and dinner, Lantana’s diverse menu is infused with herbs, spices, and delicate flavors, hand-crafted by Mitchum’s masterful culinary team. Mitchum’s fun, casual style features “Two Soups, Three Salads and a Few Appetizers” for starters, with equally whimsically named entrée choices like “Two Fish That Used to Swim,” and “Corn Fed with Lots of Flavor.” Lantana offers succulent dessert choices such as Dates Three Ways, Lemon Heaven Layer Cake and for the adventurous, a Smokey Chocolate Bacon Bar, all created by the resort’s award-winning pastry chef Alex Gutierrez.
