Following a $70 million modernization, Palm Springs Riviera Resort & Spa has launched its signature restaurant, called Circa 59, honoring the year the acclaimed resort first opened. Interiors showcase its retro vibe and famed modernist architecture. Patrons wend their way along the resort’s art-filled corridor to the restaurant, where they can dine alfresco under palms with views of the pool or inside, in a cozy time capsule of modish 1960s décor. This glamorous venue’s motif reinterprets classic design elements and offers a contemporary twist on the traditional steakhouse with artfully reinvented versions of old favorite dishes.

Like the décor, Circa 59 chefs offer reinvented versions of old favorites such as Goat Cheese Dumplings and Madeira Cream, Kobe Flat Iron Steak, and Lobster Pot Pie. Updated Organic Chicken is roasted in sea salt and served with wild mushrooms. Vegetarian Noodles include crispy tofu, edamame and squash in Coconut Peanut Sauce.

The chefs offer a daily Tasting Menu and friendly sharable sides like Lobster Mac and Cheese, Truffle Fries, and Creamed Spinach. The amazing Lobster Bisque boasts a wondrous, seaside taste. Berkshire Pork Belly braised with lentils fairly bursts with flavor. Composed salads contain Chile-Seared Shrimp and Sake-Cured Watermelon Salad and Tuscan Tuna Panzanella with boutique lettuces, candied walnuts, and herb focaccia.

Classic desserts newly custom tailored include Velvet Crème Brûlée accompanied by a spun sugar basket of little orange segments beside a pair of miniature cupcakes. Reworking the ’60s never tasted so good.

Circa 59 is open for breakfast from 7:30 to 11:00 a.m., lunch is served from 11:30 a.m. to 2:30 p.m., and dinner from 6 to 10 p.m. daily.
