A Taste Of The Spa

As increasing numbers of spa-goers visit these oases of calm with friends, resorts are offering healthful lunches to extend the spa experience. At the Hyatt Grand Champions Resort in Indian Wells, Dr. Richard Foxx, medical director of the Medical and Skin Spa at Agua Serena, worked with Executive Chef Chris Mitchum to create a salad using local dates and figs. Here’s the recipe:

Serena Salad

4 oz. mixed greens
1/2 oz. dried figs, chopped
1/2 oz. chopped dates
1/2 oz. pepitas
1 oz. goat cheese
1 oz. red pear tomatoes
2 oz. balsamic vinaigrette
1 oz. lavosh

Mix first seven ingredients in a bowl. Serve on a plate with lavosh.
