Q. Is family-style seating still popular?

Guest expert Cheryl Jablow, wedding planner at Social Frog Designs, says:

A. Absolutely. Family-style seating at long tables (also known as “king’s tables,” which typically measure 8 feet by 40 feet) are a fun, sometimes unexpected, way to lay out an event space and add great visual impact for a wedding or rehearsal dinner. Guests love it.

Start by selecting a table runner to add color and texture, followed by a combination of flower arrangements, candles, and even home décor accessories in varying heights, colors, and textures to add interest and ambiance to the tables. The result will be a dramatic display and will allow guests to talk comfortably with those seated across from them.

Low centerpieces with a casual look, such as these boxes of wheatgrass, are an unobtrusive, rustic touch. The site for this rehearsal dinner was the back palm tree lawn at Jackalope Ranch in Indio. Also, for multiple events, consider round tables for one and king’s tables for another.

 

Q. Is buttercream a no-go for the warm temperatures in Greater Palm Springs? Any new trends or flavors that could be fun to try?

Guest expert Roman Blas, pastry chef at Over the Rainbow Desserts & Cupcakes in Palm Springs, says:

A. Some brides favor fondant, but there is no need to forgo the decadence of buttercream. We pride ourselves on using fresh, organic, and local produce when possible and bake with what is in season for optimum flavors. Naturally, that means using 100-percent pure butter the majority of the time. During the hotter months, however, we will stabilize the butter by adding high-end organic shortening. During these months, we also deliver the cakes later in the evening when it’s a little cooler. It makes it fun for the couple and their guests, seeing us walk in with a cake whose buttercream has no chance of melting ! It provides a real “wow” effect. Our most popular flavors lately have been Chocolate Peanut Butter Salty Caramel, Chocolate-Covered Brownie Cheesecake, Vanilla Bean Mixed Berry Crunch, and Dark Chocolate Miso Caramel Crunch.

Over the Rainbow’s same-sex clients have had a lot of fun surprising their guests at the cake-cutting. On the outside, the multilayered cake appears as any other wedding cake, but when cut into, each layer reveals a different color of the rainbow. If you’re opting for cupcakes, any flavor is possible, including Red Bull Blue Velvet, Maple Pancakes, Bacon, and their new Tangerine Margarita — a vanilla bean cupcake baked with Patrón tequila, topped with tangerine buttercream and rimmed with sugar and salt.

 

Q. How can I ensure that my hair and makeup hold up for my desert wedding, even on a warm day?

Guest expert Ally Scott, bridal hairstylist and makeup artist at J. Russell! The Salon in Palm Desert, says:

A. I suggest wearing your hair swept up into a secure updo. This doesn’t mean it has to be a structured chignon. How about a romantic updo with soft curls all pinned up, with a few loose tresses to frame your face? The trick is to have your hair secure and up, away from your shoulders. Be confident that your curls won’t become undone as the day or night goes on. With a secured updo style, you will be able to dance the night away without your hair becoming a mess. As for keeping your makeup fresh on a warm desert day, airbrushed makeup is the only way to go. It’s sweat-proof, water-resistant, and transfer-proof, meaning it won’t rub off onto your guest’s clothing when they hug you.
