Ritz-Carlton Rancho Mirage Serves to Beat of State Fare Bar Kitchen

Chefs' Market Table will let guests sample, pair foods, wines

The Ritz-Carlton, Rancho Mirage resort will open May 15, and at the heart of the resort will be the State Fare Bar Kitchen.

Presenting daily breakfast, lunch and dinner as well as Saturday and Sunday Brunch, State Fare Bar Kitchen will offer multiple gathering spots, a cozy fireplace “snug,” a private dining room, indoor/outdoor seating, panoramic terraces and a chef’s display kitchen.

An experiential Chefs’ Market Table is destined to become an interactive highlight of the restaurant, as dining guests will be able to sample and pair tastes of fresh produce, local delicacies, artisanal cheeses, regional wines, and charcuterie.

State Fare’s interactivity will continue in the bar area, as signature trolley service will serve tableside classic cocktails with a twist.

The State Fare restaurant dinner menu will offer seasonal selections ranging from Carlsbad Oysters and Pacific Halibut with Smoked Potatoes, to Rotisserie Saddle of Lamb, Organic Pasture-Raised Chicken for Two, and the signature State Fare Burger, made with with Fiscalini HopScotch Cheddar and Onion-Bacon Jam (pictured at right).

Fresh local fruits will be enjoyed in many desserts, including Coachella Date Tiramisu and Vegan Angel Food Cake with California Strawberries. The State Fare menu provides special guidance on selections for gluten-free diets.

An extensive collection of brown spirits leads the State Fare Bar with choices from small-batch distilleries and local barrels, along with house-made bitters, fresh California citrus, and bottled carbonated cocktails hand-prepared in individual batches. The State Fare wine list will focus on California’s most interesting bottles, and its comprehensive wine collection will be presented in climate-controlled, walk-in red and white wine rooms.

State Fare is led by renowned executive chef Bruno Lopez (pictured at left), who is a member of the elite Maîtres Cuisiniers de France, which admits only the world’s top-ranked chefs to its 350-member ranks.

State Fare Chef de Cuisine Michael Poompan joins the restaurant from The Renaissance Long Beach Hotel, where he was named Chef of the Year/Americas for the Renaissance brand and was invited to the White House in honor of his culinary achievements. Poompan holds a special passion for children’s nutrition programs, and he has conducted many related classroom demonstrations for school-aged diners.

When not creating State Fare delights, Chef Poompan will offer cooking classes for the new Ritz Kids program at The Ritz-Carlton, Rancho Mirage – allowing young guests to join him in harvesting seasonal specialties from the resort’s own garden.

State Fare Bar Kitchen will present breakfast daily from 6:30-11 a.m. Lunch will be offered from 11 a.m. to 2 p.m. Monday through Friday, with dinner to be served from 5:30-9 p.m. Monday through Thursday and from 5-10 p.m. Friday and Saturday. Sunday Brunch hours are 10 a.m. to 2 p.m., with brunch to include a breakfast buffet, an à la carte entrée menu, and a dessert buffet.
