Palm Springs Restaurant Reforma Pairs Latin Eats With Nightclub

It’s been a busy two years for Reforma. Since opening in fall 2022, the vibrant restaurant and nightclub has drawn both locals and visitors to dine, dance, and often, do both. Some pop in regularly for drinks and dinner, while others show up for the energetic nightlife scene, as Reforma’s club hosts local and national DJs and dance parties several times a week.

Rob Giesecke and the team at Deepest Cut Hospitality consider guest feedback when implementing changes to the Reforma experience. “We can’t wait to jump into our third season in Palm Springs,” Giesecke says. “Our nightlife DNA drives us to keep evolving the space and give our customers something fresh.” Communal tables keep the conversation flowing and invite diners to make new friends, though separate seating is also available.

The food menu recently underwent a glow-up, focusing on creative interpretations of Latin American cuisine using the best quality ingredients the kitchen can find. Many of Reforma’s most revered dishes — the classic lomo saltado stir fry with filet mignon, seared dayboat scallops and garlic shrimp, and duck confit alongside Mexican rice — remain on the menu, but the kitchen also rolls out a variety of small plates and street food–inspired fare. Cocktails continue the fusion experience with craft options like the boozy Soldado, made with Barrell Seagrass rye whiskey, Ancho Reyes chile liqueur, lemon, and pineapple juice.

“We’re really humbled by the response we’ve received on our menus so far,” executive chef Erick Hernandez says. “It’s fun to hear customers tell us they were surprised that a nightclub would have such great food” This year, Reforma plans to dish out new, approachable flavors in addition to the fan-favorites.
